I mentioned the restaurant St John in my post about Headcheese, but I wanted to encourage everyone to visit the website and marvel in its greatness. If anyone wants to buy me a present, how could I refuse a t-shirt decorated with a pig, or the matching bag. If you aren’t in the market for gifts, just enjoy the short films.
There is even a bit where the food blogger from The Guardian cooks a pig’s head with the chef at St John, Fergus Henderson. You might notice that Henderson has some odd movements. He was diagnosed with Parkinson’s disease nearly 10 years ago. He underwent Deep Brain Stimulation and regained much of his movement. And all the while revolutionized English cooking.
Just this past year, St John was awarded its first Michelin star. Who knew a pig’s head could take you so far?
